Ingredients
Zucchini, 1 large or 2 medium
2 tblsp olive oil
Salt & Pepper
Smoked cheese
Mint, shredded
Paprika
Blueberries or cherry tomatoes
Method
Cut the zucchini in long strips, If using a large zucchini, remove the seeds from out of the middle. Small zucchinis don’t need their seeds removed.
Cut zucchini into matchsticks, 1 cm thick, salt them very lightly
Drizzle olive oil into the frypan
Place zucchini strips in frypan, side by side – don’t let them pile on top of each other
Cook them on medium heat. When coloured on one side turn them over. It doesn’t take long for the zucchini to colour up.
Lie them out on a long plate, shred some shredded mint, lightly season with pepper & sprinkle with crumbled/grated smoked cheese on top.
For colour add blueberries or cherry tomatoes or little shake of paprika.
Serves two as a entrée or use as a side dish with your main meal

ZUCCHINI FRITTERS

Ingredients
2 medium zucchini
1 cup plain flour
1 cup water (mineral water if available)
2 tblsp mint & parsley
Olive oil for cooking
Salt & Pepper
Cheese, Mountaineer
Lemon
Blueberries
Grate zucchini, squeeze any excess liquid & salt, leave in a colander for 20 minutes
Squeeze them dry & place in a bowl, add flour, water, chopped parsley & mint and season with salt & pepper.
Using a non stick pan, heat olive oil (1-2 tblspn). Place 1 tblsp of mixture and lightly spread with back of tablespoon to make a thin fritter. Cook on medium heat, until crisp, once able to lift the fritter easily, turn it over. Cook till crisp on other side
Place out on a plate, lightly sprinkle with garlic salt, grated cheese & lightly grate fresh lemon rind.
Add blueberries for a nice balance of sweetness (optional)
Enjoy as a starter or as a light lunch with fresh summer salad.
